Roe deer

The roe deer is a well-known part of the Swedish fauna. A cautious estimate of the population of roe deer in Sweden is something like 800,000 animals. The population is spread over all of Sweden but mainly the south and middle. A male can weigh up to 30 kilos and is a gourmet in the wild. On its menu you will find amongst other things herbs and leaves from various deciduous trees, sallow shoots, aspen leaves and oak leaves as well as shoots from autumn sown crops. The meat is very tasty and tender. A de-boned saddle of venison flavoured with junipers and served with redcurrant jelly is a culinary treat!
