Vild
boar
The history of the wild boar in Sweden goes back
8000 years. After having been made extinct in the eighteen
hundreds it has now re-established itself. Animals escaping from
game reserves in the 70s and 80s have given the population a
marked boost in the southern and middle parts of
Sweden. The wild boar is a very
shy animal that rarely shows itself in broad daylight. The
weight of a live boar can reach up towards 250 kilos, but on the
continent there are individuals of over 400 kilos. There are
many exciting dishes to cook with wild boar meat. One delicacy
is thin slices of smoked wild boar meat with horse-radish and “tunnbröd”
(a special kind of thin flat unleavened bread).
